This sourdough uses only white organic flour, and attempts to maximize fermentation time without adding too much lactic acid.

1First autolyse wheat and water in a mixing bowl and ⏱️ 1 hourwheat: 400 g, water: 290 g

2Add salt and starter , ⏱️ 5 minsalt: 11 g, starter: 150 g

3⏱️ 2 day in refrigerator at 4C

4Preshape and rest

5Final shape, place into container (bannaton, battard, dish)

6Proof at 24C for as long as possible

7Score surface to allow space for development

8Load oven with steam
-
9⏱️ 10 min at 470F, then reduce to ⏱️ 40 min at 370F
