This sourdough uses only white organic flour, and attempts to maximize fermentation time without adding too much lactic acid.

    First autolyse wheat and water in a mixing bowl and ⏱️ 1 hour
    wheat: 400 g, water: 290 g

    Add salt and starter , ⏱️ 5 min
    salt: 11 g, starter: 150 g

    ⏱️ 2 day in refrigerator at 4C

    Preshape and rest
  5. 5
    Final shape, place into container (bannaton, battard, dish)

    Proof at 24C for as long as possible

    Score surface to allow space for development

    Load oven with steam

    ⏱️ 10 min at 470F, then reduce to ⏱️ 40 min at 370F
